Hello, can anyone tell me is it gas or electric appliances which are the more cost effective option in a commercial kitchen here in Mauritius? From what I understand electricity and gas for business use are charged at a much higher rate than for residential purposes.

@John Cleaner Gas is generally cheaper overall. Also, you have to remember that sometimes you will lose electricity & need gas as a back up. When you do CEB application, underestimate what you think you will use so you get lower tarriff. If you overestimate & don't use that much, you will pay higher rate.
