Frankfurt cuisine is specific and different from that other parts of Germany as it belongs to the centuries-old recipes of the region Hesse. The food in this area is a mix between the North and the South of the country and has these two German influences mixed with Turkish immigration.   • Grüne Soße, or green sauce, is a paste made of spices (like borage, chives, chervil) mixed with quark, yoghurt or sour cream and served with boiled eggs. Some say that it was the favourite dish of the German author Goethe. Grüne Soße is fresh, cold and can be served with pork or veal. The secret of the recipe is that all of the herbs have to be grown in specific places so that the dish has the best taste.
  • Frankfurter Rippchen is a speciality consisting of cured cutlet, served together with sauerkraut, potato puree and usually mustard. This dish can be eaten in most of the restaurants in Frankfurt. The tradition says that the dish was made by people who didn’t have enough food. Today, however, it is a speciality that proudly represents the Frankfurt culture.
  • Frankfurter Würst and Fleishwürst are soft sausages, famous as a street snack. These Würstel are usually made from smoked pork and are eaten with mustard, bread and sauerkraut.
  • Döner Kebab is one of the most famous Turkish dishes in the world, but with centuries it has become so important to the German culture, that it transformed into a typical dish for the country. This delicacy made of meat and vegetables in a wrap is the favourite street food in every German city, including Frankfurt.
  • Handkäse is a cheese made from sour milk, served with vinegar and onions. Germans have a joke about this dish and say that it comes “with music” intending that the onions are difficult to digest.
  • Frankfurter Kranz is one of the few typical sweet dishes of Frankfurt. This speciality is made of buttercream coated with crunchy crumbs and a cherry on the top.
  • Bethmännchen is a pastry made from almonds, which is typical for Christmas time and available in all of the shops to eat or to buy as a gift.

The ever-present expected beer can be found all over Germany. In Frankfurt surprisingly the tradition is slightly tilted and the most important drink (served with the typical dishes of the region) is Apfelwein. This alcoholic drink made of apple cider comes under the names Ebbelwoi, Äppler, Stöffsche, and Apfelmost.

Being a lively city, Frankfurt has plenty of places to try its specialities, and every area of the city offers a wide range of restaurants. However, some of the best places to try traditional cuisine are:
