I have a long term EU permit from Italy and I want to live and work in Germany. I want to know the requirements.

It depends on the residency permit. There are long term ones just valid for the issuing country (Italy in this case) or much rarer are ones that are valid for the entire EU. But the bottom line is that one needs to line up work. Even to bring other EU citizens to Germany is an extra cost, risk and effort for employers. Only going to happen if one has highly demanded skills and for the vast majority of jobs, to speak a high level of German. Many positions might expect a good level of English as well but usually in addition rather than as an alternative to German. The most relevant question are; how good is your German and what job skills do you offer?
