I am relocating to Vietnam in August 2017 and am curious as to what the health check for a work permit entails. What exactly is being tested/checked and how intrusive is it?

Blood test, xray, ultrashall, eyes and ears, blood pressure. Make sure you are doing it in a hospital here as well as make sure you go to an authorized one. Its about 100 USD, I did it regular in columbia asia, Gia Dinh ind Binh Thanh district.
