Moving around Europe for a year or two

We are a retired English/Chinese couple living in Hong Kong. We both have permanent  HK IDs and British citizen passports. We plan to spend next year living for about three months in each of four European countries - say Portugal, Spain, France and Italy. We really just want to experience unpretentious life in these places. If it works out OK we would plan something more adventurous for following years. We will arrange the leases of the small HK flats we own so that we can use one for annual return visits if necessary.

We would be most interested and grateful to receive advice from anyone who has tried something like this or who has experience with longer term stays in European countries generally. We have Hong dollars so suggestions about paying rent and drawing cash would also be helpful.

Thanks Olivier. I have posted a similar post in the Portugal section. As an introduction it seemed premature to ask specific questions, but rather see if anyone had any views (pros and cons) on the idea of country hopping rather than settling in one country. Perhaps this thread would be better transferred to European Union section?
