Is it easy to get a job as a head chef . Or just a chef  all together what can help me the most my UK passport or my Aussie one ?

Possible - Maybe in one of the expensive hotels (assuming you have the experience).
However, the chances of a job in the near future, or even after the virus mess has gone, are much more limited than before as a lot of hotels might well have gone bust, or at least be struggling to survive.
As for passport - No difference.

I would stick with the passport of your residence or what your work experience on your cv covers mostly, if it is on your cv "dual nationality" it may be wise to remove this as some countries find this confusing for many reasons and would require various goverment checks, so you will reduce your market value without realising, if for example your from AUS but hold a UK passport through birth rights and dont have a uk home address, pay uk tax, on the voting list you csnt get a police check/ full check so many places will find you high risk

As much as Indonesia protected jobs for "Indonesians first" prior to Covid-19, you can logically conclude (given the high numbers of currently unemployed) that post Covid-19, jobs will be even more protected.

Pre Covid-19, executive or head chef jobs for foreigners in Indonesia (including Bali) were very rare aside from foreign chef owned establishments. 

UK versus Australian passport makes no difference.

A very likely scenario.

The tourism industry all over Indonesia has been badly damaged by this so, even after the virus mess eases, jobs for foreigners in many industries are very likely to be hard work to find.
Specialist jobs will still be around, but the entertainment and tourist industries will probably take a while to bounce back. They will return to normal in time, but a lot of places will keep costs down until tourist numbers recover, and hiring locals is far cheaper and easier than hiring a foreigner.

This is one where patience is required.
