Hi @Crossing You don't need a travel agent. All the information you seek can be found online. Here's a few websites to help you out:

1) https://www.mauritiusnow.com/ - general information about Mauritius as well as travel requirements. There are many other websites with similar information but mauritiusnow is pretty well known

2) https://safemauritius.govmu.org/ - website to get the Mauritius All-in-One form. You will need this on entry to Mauritius

3) Use a flight aggregator website like https://www.skyscanner.com/ to get the best available tickets for your dates. I imagine you'd either fly through Kenya (Kenya Airlines) or Johannesburg (SAA) from Zambia

4) Use hotel aggregator websites like https://www.booking.com/,https://www.hotels.com/ or https://www.tripadvisor.com/ to book your accommodation. Alternative, join a Facebook group like Mauritius Short Term Rental to rent a property directly from the owner

Some final notes: most tourists will either stay in the West or the North of the island. There are splendid beaches all around Mauritius including the East and South. The east is just a bit windy but still nice for a short stay and it's close to the airport. The west and the north will require a taxi ride of close to (sometimes, more than) an hour so that will be an extra expense - you're probably looking at Rs 1,500 - Rs 2,000 (maybe more) each way.

Avoid when European schools are on holidays (Easter, mid-terms, Summer etc) as the prices for flights tend to go up a lot (and accommodation too I guess).

The north and west are probably the most touristy and easiest to get around.

Flic en Flac has lots of self-catering accommodation and very nice sunsets. You could walk around from the beach to restaurants and save on taxis. (Bus services are cheap and will get you most places). 

Worth checking out sunset times as it gets dark quite early in the Winter (not cold though).

The scenery is quite varied so some day trips are worth considering.
