Recipe: Mauritian minn frir

Expat.com is back this week with a new dish: Mauritian fried noodles. Of Chinese origin, the fried noodles is one of the most popular dishes on the island. It is easy to make and there is no doubt that the whole family will enjoy it.

Ingredients

  • 400 g of Chinese noodles
  • 3 chicken breasts
  • 3 eggs
  • 1 carrot
  • 1 cabbage
  • Salt, pepper and olive oil
  • Chives
  • Garlic
  • Oyster sauce
  • Soy sauce

Preparation

  • Cut the chicken into strips and marinate in the oyster sauce and garlic.
  • Make an omelet. Cut it into long strips.
  • Prepare the vegetables: grate the carrot and cut the cabbage.
  • In a wok, put 1 tablespoon of olive oil and sauté the vegetables (carrot, cabbage and chives).
  • Add the oyster sauce.
  • Cook for 5 mins.
  • Then add the chicken and the Chinese noodles. Add the soy sauce until the noodles are well colored.
  • Depending on your preference, you can use clear or black soy sauce.
  • Don't add too much of it to avoid the noodles being too salty.
  • You can add some chicken broth to spice up the dish.
  • Cook for 5-10 mins.

Your dish is ready. Add the sliced eggs when you serve. You can top with garlic sauce and a little green chilli.
