she has a lift in lublin & i wouldn't feel right taking her away from that asking her to move to australia

I honestly think you will have trouble getting a job of any sort as you are coming from Australia and not from an EU country. Hassles with visas etc.

Yes, practicly in every city in Poland there are job offers for te native speakers of english
