German taxes are a very complex topic.
About some taxes, e.g. income tax, you can read on this forum. In this respect, you will be treated just like any other resident in Germany - but since apprentices earn very little, you may not have to pay much (the first €9000/year or so are tax-free).
Other, like GST (or MWSt in German) are unavoidable and added to almost everything you buy.
Please also note that taxes are not the only dues you must pay: Read up on health and social insurance fees as well!
