I am applying this month. My questions are:
1. Can I book a hostel for the first 15 days? and later find out the rest period while I am there. Will application accept that.
2. Which period I should book, means I am applying Nov 18 so should I book for Feb 19? as visa takes much time to process.
Kindly suggest me as per your experiences. Thanks

Depending on where you will move, finding a permanent place to rent can take much longer than two weeks - in some of the more popular cities (e.g. Munich, Stuttgart, Frankfurt, Hamburg) it can be several months from start of your search until move in.
Therefore I suggest you book the initial hostel for a longer period, or select one where you can flexibly extend or cancel your stay.
Regarding your second question: You better ask the embassy how long your visa application process will take.
