What are some of the most popular local dishes that are easy to prepare?

What are the most common ingredients used in dishes in Jordan? Where can you purchase them?

As a Jordanian i would say it's very hard to learn on your own, most of the local requires spices and salt and you won't find a book telling how much salt to put in Mansaf, so there is two options here,
1- go to royal academy near the medical city and join a course

Or 2- you can make it more interesting by visiting local villages and ask from old women to teach you, just pay for the ingredients and they will be more than happy, but you should know you will need someone who can speak Arabic.

Cooking like a local in Jordan
Well , there isn't much to it..
It's just like anywhere where we have our own distinguished dishes mainly (mansaf) a huge rice pile topped with goat meat cooked in yoghurt or  (laban) as we call it here . Now this dish is irresistable here in jordan!!
It's mainly prepared during both wedding and funeral festivals and ceremonies.
Another local famous dish here is what we call (maqloopa) in arabic translated to (turn a cooking pot upside down)
Where also we fry potatoes and eggplants when ready they will be arranged in layers on the bottom of the cooking pot along with  chicken or meat .
Rice then will be added on top of these ingredients  ..salt and pepper added ...with some already boiled water added just to cover the surface of the rice.
The pot will then cook on a medium heat for about an hour
When ready the whole pot will then be turned over as the name suggests on to a big round flat stainless steel dish where the potatoes,eggplant , checken or meat will show up on top !
