180 day tourist visa

Just wondering while I pursue residency requirements can one obtain a 180 day tourist visa, leave ecuador for 1 or moe days and return with a new 180 day tourist visa?

No.

The 12-IX 180 day visa is only good for 180 days out of 365 and cannot be renewed, not by doing a border run nor by applying for an extension. But it should not take more then 6 months for a resident visa.

...and, in the unlikely event that it does take more than 180 days, you can still stay in the country until residency is resolved. You will not need an extension as long as the application is still being processed.

I just got my approval for my Visa in less than 1 month. Also, the clock stops ticking, as Joseph mentioned, once you submit your paperwork.
