Unless you have specialist skills that a local does not have then you will not find work in Fiji.

You could try the Fiji Govt Immigration website for more information about visas, work permits etc.

An online Goggle search will give you all the information you require.
As far as I am aware there are no direct flights from China to Fiji. You would have to fly via Australia or New Zealand. You would require a transit visa for this

Not too hard. www.immi.gov.au for Australian transit visa 
and www.immigration.govt.nz for New Zealand transit visa.

As long as you have onward flight ticket it should not be a problem.

Or you could ask your travel agent to get a transit visa when you book your ticket.
