I am currently working in Oman as a hydraulic technician but my visa is engine mechanic. Can i change my profession in my labour card from engine mechanic to hydraulic technician? What are the steps?

Yes it's possible.
Your sponser PRO have to visit with you to the nearest ROP. Your sponser must have the clearance of the new designation and it should not be in the 100 percent Omani job category list. If all good pay 25 OMR and get a new card instantly.

No impact on visa type unless any restrictions are imposed, so you can continue without changing.
