I have not cooked yet in Egypt but have a good friend from Egypt and learned from him how to cook his cuisine. They use eggplant a lot. I know a few recipes that I would love to share with you. If you are in Egypt, I can teach you in a few months. I will be coming in June.

egg plants !!!!! you reached the egg plants !!! :lol:  yes egg plants are the food good mode times.
its healthy ,green and tasty , i can eat 4 big eggplants grilled with garlic,green hot peper,onions,olive oil  and ham meat  "cow "and bread and oriental bread .
this recipe can be done only once a week  :)

another day you can fry it ,other you can make it with vinegar.
