We are just looking for some advice on how you guys did it or know the best way
He is a dairy farmer in new Zealand right now. We have lived together in new Zealand for one year so we can't apply for partnership visa yet

To answer your specific question. As a non-EU citizen, your boyfriend will find it incredibly hard, if not impossible, to get a visa to enter and work in the UK. The UK is only issuing entry visas to people with skills that are listed on the shortage occupation list; this link will take you to the current list; I've just checked it and there are no farming shortages identified.
