French fries

Don't throw the bacon grease out, fry your potatoes  in it, smoke Vietnamese bacon has a great taste,

I'm not new to this forum, I've been reading this for Four years, time to respond, :)

More importantly, are there any VN-grown potatoes that make good fries?

In Euroland they are called chips and in North America they are called fries.

'Experts' say for Chips use Snowden; for French Fries use Bintje, Desiree or Russet Burbank. In VietNam they appear to have a choice in the veggie shops: Old (crop) and New (crop).

And I don't like buying frozen packets of potatoes. So, which do you use Frank Malt? (P.S. I only cook with virgin olive oil)

I buy potatoes from the market Co Bac Street Q1,they are similar to Alberta russets, sometimes I use olive oil but usually general cooking oil. I always save the bacon grease because it's like cooking with gold ;)
