My wife and I are looking to relocate to Malta from the UK with a monthly income of £2,100 could we live comfortably with rental of approx of 700 euros and bills and shopping on top?

Simple answer is yes.
We live in Gozo and manage OK on quite a bit less with a rent of €650, 'though there is not much spare since Brexit wiped out around €300 a month from our income.

We manage on just over half that amount on Gozo. It does depend on your lifestyle.
