My wife with a 2 year old boy and I will be visiting Hong Kong for 3 days next February during Chinese New year.
We plan to spend 3 days in Hong Kong with 1 day in Hong Kong Disneyland.
We would love to go to nice beaches in Hong Kong too, any suggestion?
Where to visit around Hong Kong?

There are many nice beaches in Hong Kong, especially in Sai Kung District, just take a look at miracgogo.com
You will find that there are many nice beaches there.
Realistically, you would want to give it a full day to visit all the beaches mentioned above.

you can take the Ferry from Central pier and head up to Cheung Chau it is 30 to 45 mn ( take the slow ferry deluxe class so you can go outside on the roof and enjoy the view of beautiful surrounding islands , once you Arrive in Cheung chau turn right the nfirst on the left and go straight to reach beautiful beaches, island is pretty safe for kids as there are no motorized vehicles allowed.
there is a lot of sea food restaurant, japnaese, chinese, Indian, and even a Pizzeria you can also rent bicycle 30 HKD / hours
