Can anybody please point me towards an English speaking notary in Quito? I need to have my signature witnessed on a document that is in English, but I don't want the cost/hassle of translating the document (just a signature witness).

Have you checked with the Embassy of the United Kingdom, Russell? I presume they often provide notary services for citizens of the U.K.

It was the first thing I did, but the UK Embassy will no longer witness signatures.

It would be a disservice to U.K. citizens for their embassy to stop performing this service and not refer citizens to someone in Quito that could assist.
Maybe by now they can give you a referral or advise you.
If they're still no help, contact my immigration attorney in Quito, Sebastian Cordero, at scordero(at)gcabogados.com ... I have known him to pull a rabbit or two out of his sombrero from time to time.
