Made my trip to Cebu City yesterday and this morning went shopping for all the stuff we don't see in the province. While I was picking up some meat. I'm grabbing some whole chickens and the girl stocking them engages me in talk. Suddenly I get the idea to ask if they cut their pork from whole hogs or not. I can see a couple people in the butcher area cutting and packaging. I told her I want a whole Boston Butt, from the pork shoulder. She says she'll ask the butcher....
Out comes the butcher carrying a whole hind leg. I explain to him and he's kinda getting the idea ...it's from the front shoulder. I pull up a quick YouTube of Bearded Butchers cutting bone in Boston Butt. He immediately understood. Five minutes later I had a whole Boston Butt for putting in the smoker tomorrow. And we're going to have Memphis style Pulled Pork! yee haw.
Asking sometimes gets you good results.
