Good morning, 
This  are my answers  at your  questions about  Tunisian food:

1)best well known  Tunisian food:   cous cous, bloukhia,  pulp,
2) unusual  dishes so far discovered:   gombo, bloukhia, Psisa, elba;
3)what makes up the  typical   food in Tunisia:  local species, expecially   curcuma, ginger, cumin, coriander, excellent olive  oil,  light  friendly  wines.
4) favorite dishes:   bloukhia with  meat,  krik, fish and meat cooked in the Tagin.
5)The essential  ingredient  defining  Tunisian cuisine:   Healty Product, Season  Fruit and vegetable,  excellent  fish,  pulp  cooked in  several ways.

2. Which are some unusual dishes that you have discovered ?

Probably Mulukhiyah (a viscous sauce made from dried leaves) or osban (stuffed sheep's stomach usually includes organ meat and rice)

3. What makes up the typical breakfast in Tunisia?

Cake, cookies, yogurt, dates, chemia, bassisa (a flour made of roasted chickpeas, barley, and other grains mixed into a paste with olive oil)
- basically anything sweet is breakfast in Tunisia

4. Name 3 of your favourite festive dishes.

Grilled meat, couscous with raisins, chickpeas, and lamb, and almond cookies

5. According to you, which essential ingredient defines Tunisian cuisine?

Tomato paste and olive oil
for sweet things: almonds and chickpea flour
