I'm sure there are Vegans in Mexico. The people of Mexico eat probably 80% more vegetables than in the U.S. every dish includes herbs and vegetables. But most put some bacon, beef, cheese or Chicken, etc. with those vegetables. Mexico cd. is just loaded with vegan restaurants. Many other cities at least add vegetarian dishes and you can ask to make it vegan, they are very willing to make what you wish.
