I see many people talking about how confusing the system may be, but not many real answers.  Has anyone used the affordable expat insurance (excluding the USA and Canada?)  I see what they cover and don't cover, and it appears reasonable for a healthy person.  Any suggestions for companies would be appreciated.  I plan to move to Germany next month and need coverage for my Aufenthaltserlaubnis, Thanks.

Only very few foreign or expat health insurances fulfill German requirements. The sticking point is often that there cannot be a maximum yearly or lifetime coverage for anything.
Ask your expat insurer whether they are accredited as statutory health insurance provider in Germany. If not you better get German insurance!
