Check out Ban Me Thuot, Kontum, and Pleiku in the central highlands; plus all the highlands north and north-west of Hanoi. Be prepared for uncomfortable travel and meeting non-English speaking people. That's what happens when you leave the coastal tourist trail. Good luck.
