For the interview, I think you can find a lot of great tips on the net.  I would just suggest to be honest, respectful and prepared.

Dubai is quite an open society for expats and you shouldn't have any problems as a single mother.  However, to get visas and sponsor your child, you might have to provide quite a lot of documentation which might not be that easy.

I have a change of name deed poll as we don't have contact with her father. Her passport etc is in my name. I will struggle to get anything from the courts I think.

You would need to prove custody or get NOC.  Also the birth certificate should have the name of the father on it.
