Wish to move to Victoria

Hi all.
I am 54 and currently living in Venice.
After 33 year spent with decent success in the Airline Industry I am nowadays looking for a big change.
I spent some wekks in Seychelles and i decided this place would be perfect to live in the future.
I learned reading here and there that it is not easy to find a job so I am seriously planning to start some activityies.
The easiest thing coming to my mind, being Italian, is to open a commercial site for Italian high quality food and wine.
Can I get any detailed info on what to do? License? shop rental fess? any agency able to help? any info on importing food and wine restrictions?
