Could anybody recommend me a "trustful" company to help with the process of setting a company in Malta. I mean this type of companies that make the paperwork for you and later on manage it if you leave abroad. Does anybody know one of this companies with some body that can speak spanish?

The Expat Malta directory listing has contact details of a tax advisor that I have used personally and have always recommended. I have no doubt that he can help you based on your requirments- If it's not in his league he will surely recommend the more suitable entity to do so
