Planning to visit Hanoi and mong cai in April. Intend to visit Dongxing also. Looking for must do activities off the tourist path

Flying into Hanoi and traveling to Mong Cai. I don't know if by bus or motorbike yet, it's a 7 hr trip by bus. Once in mong cai, plan to go over the border to dongxing, check out the white water rafting, beach, etc and return to Hanoi. 3 weeks. Any ideas of things to do for a couple would be appreciated
