My mother recently got her Mauritian citizenship (Both her parents were Mauritian by birth)
She was not born in Mauritius, and my father is not Mauritian.
Could I possibly obtain citizenship through my mother?

Since your mother was NOT born ( Jus Soli- right of soil) on the island and she got her Mauritian citizenship through the Jus sanguinis , I am afraid you won't be able to obtain the citizenship through her ( she does not have birthright citizenship like her parents).
FYI: Jus sanguinis (Latin: right of blood) is a principle of nationality law by which citizenship is not determined by place of birth but by having one or both parents who are citizens of the state.
