My girlfriend and I are planning the same thing in March. After my research I decided to go with Hua Hin. I didn't want anything too crazy like Phuket or Pattaya but still enough nightlife to make things interesting, If you don't care about nightlife, there are many nice beaches. I considered Krabi for awhile.

Phuket has heaps of nice spots. Rawai for example. Just gotta avoid Paton for less crazy 😉
