Sustainable tourism !

Good afternoon,
Needing help Will take you 5 minutes not more

I am currently writing a travel guide about Saigon and the whole Vietnam. For this reason, I am looking for some adresses which are sustainable.
*Types of adresses : hotels / restaurants / shops / activities (visiting, sports, culture, ...)
*Adresses must fill at least 2 criteria of the 3 following :
-environment-friendly (examples : organic food / hotel using less energy / biking instead of taking bus ...)
-protection of population (examples : hand-made in Vietnam shop, massage by disabled people ...)
-and, of course, high customer satisfaction !

If any of you knows an adress, or knows somebody who can help me (I cannot speak vietnamese but it would be perfect meeting associations ...), or has any idea for me, I would be so happy with you helping, this is for good cause, making the frenchies like me travel in a sustainable way to Vietnam
