In season the truffles of Piemonte are the height of indulgence. Black summer truffles grated on a white cheese pizza with a couple of eggs on ttop are perfect with a glass of slightly chilled nebbiolo. Later in the year he incomparable white Alba truffle is a match with most things and deserves a Barbaresco or Barolo. Fried porcini in autumn are probably next best and a meal in themselves with a Roero Arneis or Nascetta or nebbiolo

Hello there. My favourite italian cuisine is EVERYTHING!! However as we visit the Liguria on an annual basis, I have to say trenette with pesto, green beans and potatoes. (my mouth is watering already). Also the foccia with cheese. Yum!

When visiting Rome, most folks are usually ready and willing to try the typical Roman pasta dishes (primi piatti) like carbonara, amatriciana, and cacio e pepe. Trying the secondi, however, usually requires a bit more convincing. These dishes often feature various frattaglie (innards) and scarti (scraps) that, while delicious when prepared properly, don't necessarily translate well on the menu. This is the so-called “quinto quarto,” giving rise to such specialties as trippa alla romana and coda alla vaccinara and la pajata.

Hi,

Although it took a bit of nerve the first time I had it, wild boar has become one of my favorite foods in Italy. I also love anything with truffles on it or in it. Spaghetti with truffle oil is amazing. Of course the cheeses and fruits are wonderful as well.

As my father is an Italian and I adore everything what has to do with Italy I have some favorites too.

Sometimes, when the dish is simple, it taste better than all the high tech techniques that some dishes require.

My father comes from Sardinia and when we visit our family I always remember these sweets.
A nice made while were watching. They called Cattas or Zipula.

Another sweet I have good memories are these almond cookies, packed in color full papers, We bought them always for back home, the Dolci Pasticceri,

these you can fill with meat, cheese or spinach which are traditional fillings but you can always put something what you like.

These are the one of the most popular kinds but the list goes on and on.
