If you're into nightlife, Lush (2 Ly Tu Trong, Bến Nghé, Q. 1) has Ladies' Night (free drinks for women) on Tuesdays from 9 pm - 12 am. Acoustic Bar (6E1 Ngô Thời Nhiệm, P.7, Q. 3) has a great atmosphere and live music. Their Ladies' Night is on Wednesday.
If you haven't seen the Saigon Zoo, that's a nice place for a walk. Really close to it is Ocean Palace (2 Lê Duẩn, Bến Nghé, Q. 1), which has great dim sum.
And I guess there are always the usual tourist attractions. Museums, markets, etc.

It all depends on what you want to do. I haven't been back in four years and there are a ton of sky bars. Some can be pretty pricey but others aren't too bad. I would look into walking around the park early in the morning and just see what looks interesting.
