I am about to work in Maastricht, in Stein,and I have 3 housing options; Wilhelminasingel, Ridderstraat or ST.Maartenslaan.
Which of the above areas is the best one in terms of transport to/from Stein everyday and living style (restauranats,markets, pubs, ...

Although I am very unfamiliar with Maastricht and Stein in particular, I can tell you that public transport is more than decent in the Netherlands and that everything is on a relatively small scale, so using a bicycle to get around is not only reasonable, but also very common.
